To set the subject of an email message assign the Subject property on the EmailMessage instance. If the subject contains non US-ASCII character data then see Sending an Email message for languages other than English.
Example
[C#] message.Subject = "Meeting today at 2:30 p.m.";
[Visual Basic] message.Subject = "Meeting today at 2:30 p.m."
